My baby res doesn't seem to like tuna, is this wrong write ? Is it just cause I just introduced it to ?

Well, it is not a guarantee that all turtles like tuna, I myself love spinach, but most people, you couldn't pay them to eat it, so you see everyone has his or her likes and dislikes, turtles are about the same.

So should I clean his water out everytime I try to feed him somehting new that nhe just knocks down?

You can try feeding hime something new in a separate container, that way you don't have to change the water out whenever you try something new.
